I made some potato korokke (croquette) for breakfast yesterday
I boiled some cut potatoes, together with some sliced onions and some shredded oyster mushrooms until they're soft, get rid of the access water and mushed everything up, added some salt, white pepper powder, sired minced meat and chopped spring onion into the mix. Using my hands, I then formed the potato mix into balls and coat the potato balls with rice flour, then into an egg mix, n finally into a bowl of breadcrumbs, where after that I deep fried the korokke in palm oil until golden brown
Easy peasy n oh so yummeh
There's a version of Japanese korokke where boiled carrots and curry powder are added to the potato and meat mix (curry potato korokke), i'm gonna try that later
