I made some potato korokke (croquette) for breakfast yesterday =D

I boiled some cut potatoes, together with some sliced onions and some shredded oyster mushrooms until they're soft, get rid of the access water and mushed everything up, added some salt, white pepper powder, sired minced meat and chopped spring onion into the mix. Using my hands, I then formed the potato mix into balls and coat the potato balls with rice flour, then into an egg mix, n finally into a bowl of breadcrumbs, where after that I deep fried the korokke in palm oil until golden brown =D

Easy peasy n oh so yummeh :iconhungryplz:

There's a version of Japanese korokke where boiled carrots and curry powder are added to the potato and meat mix (curry potato korokke), i'm gonna try that later :drool:

Wow, yours look so yummy! Just the right texture and color! My last batch came out like this and they were absolutely perfect *.* I also love making korokke (the simple potato/beef mix that most Japanese do) and I've seriously gotten addicted to eating them! I've been thinking about adding more than just beef into the potato mix - I saute the onion and garlic first before adding the beef - thinking about ground pork as well. <: Korokke are such fun to experiment with!

What sort of panko do you use? Plain or seasoned? :3 Also, do you find it hard to coat the floured patties with egg? That's always the most difficult part for me @.@;

oh and yeah, i find it kinda hard to coat the floured patties with egg too, must be extra gentle while holding each patty through the process :nod:
